One of the most significant and treasured spices of India, Ginger is a refreshingly aromatic underground rhizome. Pungency and aroma are the principal sensations which makes ginger more portable . In ginger,both volatile and non-volatile constituents have significant role for imparting the total flavour sensations such as taste, pungency and odor.
Flavour qualities of ginger depend primarily on factors such as variety, geographical origin, processing methods and storage condition. The characteristic fragrance and flavour of ginger is attributed by violated oils that constitute 2-3 percent of fresh ginger.

Whole ginger, Dried
This shall be dried rhizomes, officinal rose in pieces, irregular in shape, pale brown in color.
Ginger Slice and powder
The Whole Dried ginger is cut into slices, sun dried and can also be supplied in powder
Quality of Offering
- Dried rhizomes of Zingier officinal Rose, in pieces, irregular in shape, pale brown in color
- The fibrous content shall be characteristic of variety with peel not entirely removed
- The characteristic taste and flavor shall not have a musty odor or rancid with bitter taste.
- Rhizomes shall be free from added coloring matter; from mold growth, living insects and practically free from dead insects, insect fragments and rodent contamination
- They comply with restrictions in regard to Aflatoxins, Metallic Contaminants, Insecticide or Pesticide residue, Poisonous metals, naturally occurring contaminants
